Fudgy Rockin' Turtle Brownies

  • ½ cup unsalted butter, soften
  • 1¼ cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon salt
  • ½ cup all-purpose flour
  • ½ cup milk chocolate chips morsels, coarsely chopped
  • ⅓ cup walnuts, chopped
  • ½ cup miniature marshmallows
  • 1 cup caramel bits or 8 individually wrapped caramel candy squares
  • 2 tablespoons heavy cream
  1. Preheat the oven to 350F degrees. Grease and flour a metal 8' x 8' baking pan. Line the bottom and sides parchment paper, then set aside.
  2. In a large mixing bowl, cream the butter and sugar together with an electric mixer until fluffy, about 4 minutes.
  3. Add vanilla extract and the eggs, one egg at a time.
  4. In a separate bowl, sift together the cocoa powder, salt, and flour.
  5. Slowly add the dry mixture to the wet mixture, and mix until just incorporated.
  6. Stir in the chopped chocolate chips, then top with walnuts and marshmallows.
  7. Bake for 30 minutes, then use a toothpick to check for doneness. Allow it to cool completely, before taking it out of the pan, then slice the cooled brownie into 9 pieces.
  8. In a microwave-safe bowl, microwave the caramel squares or bits and the heavy cream until completely melted and smooth, about 1 to 1½ minutes. Stir until smooth, then drizzle over the brownies with a spoon.
