Buttermilk Fried Chicken Wings with Jalapeño and Garlic

  • 4 lbs chicken wings/party wings
  • 4 cups vegetable oil
  • 2 jalapeños, sliced
  • 8 cloves garlic, finely minced
For the marinade:
  • 2 teaspoon paprika
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon salt
  • 2½ cups nonfat buttermilk
For the dredge:
  • 2 cups all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon salt
Instructions
  1. Place the chicken in a large baking dish. Space out evenly so that none of the pieces are overlapping.
  2. Sprinkle 1 tsp paprika, 1 tsp freshly ground black pepper, 1 tsp garlic powder, 1 tsp onion powder, and 1 tbs salt over the chicken wings. Pour the buttermilk over the chicken wings, then mix to coat each wing evenly. Cover with plastic wrap, then refrigerate for 4 hours.
  3. Prepare the dredge by mixing together the flour, 1 tsp paprika, 1 tsp freshly ground black pepper, 1 tsp garlic powder, 1 tsp onion powder, and 1 tbs salt in a medium size bowl.
  4. Take the chicken out of the fridge. Shake off the excess liquid, then dredge each piece on both sides in the dry mixture and place on a plate.
  5. Line a large plate or serving dish with paper towels, then set aside.
  6. Pour the vegetable oil into a dutch oven or large saute pan. Allow the oil to heat up to 375F degrees.
  7. Place about 6-8 pieces of chicken wings in the oil at a time, and cook each side for about 7-8 minutes.
  8. Transfer to the paper towel-lined plate to drain the oil. Repeat until all the chicken is cooked, but always allow the oil to return to 370-375 degrees F before frying another batch of chicken.
  9. Place the chicken in a large mixing bowl, toss the chicken with the sliced jalapeños and minced garlic and more salt and pepper to taste. Plate then serve immediately.
