Oatmeal Chocolate Chip Cookies

  • 1 cup butter, soften
  • ¾ cup granulated sugar
  • ¾ cup dark brown sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1¼ cups all-purpose flour
  • 3 cups quick-cooking oaks
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup semisweet chocolate chips
  1. Preheat the oven to 350 F degrees.
  2. With an electric mixer, cream the butter and sugars on medium speed until smooth.
  3. On low speed, add the vanilla extract and eggs, one at a time.
  4. Add the flour, quick-cooking oats, baking soda, and salt. Mix on medium speed until just incorporated.
  5. Stir in the chocolate chips with a spatula or large spoon.
  6. Scoop 1 inch balls onto a cookie sheet lined with parchment paper
  7. Bake for 10-12 minutes. Cool for 10 minutes before transferring.
