Pan-fried Salmon with Wasabi Dill Sauce
For the salmon:
  • 1½ pounds (about 2 filets) salmon
  • salt
  • freshly ground black pepper
  • 2 tablespoon extra virgin olive oil
For the sauce:
  • 4 tablespoons plain Greek yogurt
  • 4 tablespoons sour cream
  • 1½ teaspoons prepared horseradish
  • 1½ teaspoons wasabi paste
  • 2 teaspoons lemon juice
  • 1 to 1½ teaspoons fresh dill, chopped
For the salmon:
  1. Season both sides of the salmon with some salt and pepper. Line a plate with a paper towel.
  2. In a large skilled, heat up the olive oil over medium-high heat.
  3. When the oil is hot, place the salmon in the skillet, skin side up. Cook until crispy and brown, about 4 minutes. Cook the other side until the skin is crispy, about 3 to 4 minutes. Plate over the paper towel to soak up the oil.
For the sauce:
  1. In a small bowl, mix together all the ingredients until incorporated. Serve on top or on the side of the salmon.
