Gluten-free Chocolate White Chocolate Chip Cookies

  • 3 cups powdered sugar
  • ⅔ cup cocoa powder
  • ½ teaspoon salt
  • 3 egg whites
  • ½ tablespoon pure vanilla extract
  • 1 cup white chocolate chips
  1. Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the powdered sugar, cocoa powder, and salt. With an electric mixer, mix in the egg whites and vanilla extract on medium speed. Mix until smooth, stopping occasionally to scrape down the bowl with an offset spatula. Stir in the white chocolate chips.
  3. Scoop two tablespoons of batter per cookie onto the baking sheet, leaving at least two inches of space between cookies.
  4. Bake for 12 minutes, until the tops are cracked and shiny. Allow the cookies to cool on the baking sheet for 15-20 minutes before transferring.
