Instructions
 

  • Prepare Ingredients: Mince or grate the garlic and juice the lemon.
  • Mix Base: In a medium bowl, combine the tahini, lemon juice, olive oil, and garlic.
  • Whisk to Combine: Whisk until the mixture thickens or seizes (this is normal).
  • Thin the Sauce: Add cold water, one tablespoon at a time, whisking after each addition until smooth and pourable.
  • Season: Stir in salt, cumin (if using), and maple syrup or honey (if using).
  • Taste and Adjust: Adjust lemon juice, salt, or water to suit your taste and texture preference.
  • Serve or Store: Use immediately or store in an airtight container in the fridge for up to 1 week.
